Oliveta della Torre is us: Fosca and Beppe. We are a family business, born and raised in the hospitality industry, which has turned to olive growing. Our common goal is to live our lives in harmony with the seasons, to live our passion for the land and its fruits, and to contribute to the preservation of the integrity of the Tuscan cultural landscape.
The organic farm project was launched in 2012 with the aim of reviving two abandoned olive groves for the production of high quality, handcrafted extra virgin olive oil. The properties are located in Murlo, near the old tower of the Castello di Montepescini, hence the name Oliveta della Torre.

It was not all roses in the beginning. Producing high-quality extra virgin olive oil in an olive grove that had been left fallow for years was not easy: on the one hand, the trees, which had not been pruned for years, had grown too large; on the other, weeds, thorny bushes and wild shrubs had taken over. In short, the undergrowth was slowly taking over.
But Fosca and Beppe, tenacious and patient, managed to bring the olive trees back into production and, in just a few years, produced an extra virgin olive oil of the highest quality: fruity, bitter, spicy and genuine, the typical Tuscan oil that is the envy of the world.

From the beginning we have chosen to grow our crops naturally, without the use of pesticides or chemical fertilisers. This enabled us to achieve organic certification in 2015. So we have been proud organic farmers for 10 years!

From 2012 to today, Oliveta della Torre has come a long way. In addition to our organic olive oil, which we sell mainly in Switzerland and Germany, we grow organic walnuts and run a small henhouse that produces fresh eggs every day. We also produce Marseille laundry soap and Hypericum Oleolith, always using our organic olive oil as the raw material.

Finally, in the summer we grow tomatoes, aubergines, courgettes, lettuce and peppers in our vegetable garden, which we harvest and serve immediately as snacks or for dinner at the Agriteca. What we don’t sell as an organic farm, we consume in the family, otherwise we process it and store it for the winter. In short: from the field to the table and from the table to the pantry. After all, life is simple, so why make it complicated?

High quality hand made olive oil

Today we produce two types of high quality extra virgin olive oil from our approximately 700 olive trees of the Leccino, Pendolino, Frantoio and Moraiolo varieties. Our oil is rich in polyphenols and has a low acidity, undoubtedly due to the careful harvesting of the olives when they are ripe, but above all to the rapid delivery of the harvest to the local oil mill.
